Hi everyone. I signed up about a year ago and promptly stopped reading. But I have spent the year making better food choices and getting appliances!! I am eating 10 servings of fruits and veggies most days of the week now (and mostly raw). That's up from very few. I have a fruit smoothie in the morning and a green smoothie for lunch. Got a Vita-Mix Pro for my birthday and an Excalibur 9 tray dehydrator for Christmas and use the mixer several times a day and am experimenting with the dehydrator. Love kale and chard "chips". They really help as my addiction is salty chips and crackers. Made the walnut zuchinni crackers. They help too.

I plan to try 30 days raw soon. I want to try some different foods to get a good number of regulars before I try it though. I will also buy Alissa's book as I have a lot of questions. And I am learning a lot from reading here. So thanks for the inspirations.

welcome!!!! sounds like you are well on your way already. nice to have all the appliances first.

have you tried sweet potato chips? they are my personal fav.

you marinate sweet potato slices in olive oil, apple cider vinegar and salt. then add any spices you like. i like using curry myself. then dehydrate them for a short time and let them still be naturally hard but slightly softened. mmm yummers. it's a quick snack since it only takes about 90 minutes (30 minutes of marinating and an hour of dehydrating)

Aleesha - how thin do you slice them? Do you need a mandolin or special slicer - for them to only dehydrate for an hour? I will try these. LOVE chips. Need to find a perfect and healthy replacement.

VeganforLife(do you really like green smoothies - I never would have guessed LOL) - here is my green smoothie. Recipe from boss(he's a health fiend chiropractor)

one apple
couple inches cucumber
2 sticks celery
huge handful spinach
juice of 1/2 lemon and 1/2 lime
Tbsp raw apple cider vinegar
tsp raw honey
cup water

I don't blend it too much cause I like the crunch. Drink and eat it with spoon. Every day. Crave it. Have never craved veggies before.

I make them different every time to be honest. My personal fav is slicing them like french fries so they stay really crispy. But I've also done them paper thin. So... make them however you want them to be and just remember... sampling is a good thing LOL

(I even eat them without dehydrating at all sometimes)

Then I use the marinate as a gravy... to dip them... mmmmm

*must stop now... i'm fasting...* LOL

Wow.....I'm impressed....and it sounds like your having fun doing it. You will enjoy getting Alissa's book...the DVD is really worth getting also. Keep it up!!!
