The only hard part about making this candy is getting it on the plate and not in your mouth.
1/2 cup walnuts (dry)
1/2 cup medjol dates (about 6)
1 t. coconut oil
2 t. coconut butter
1/8 t. celtic sea salt
1/8 t. vanilla (alcohol-free)
Grind the walnuts finely in the food processor. Add remaining ingredients. Process until smooth. Shape into squares.
Cacao topping is optional. This topping is made from cacao powder, agave, and cashew butter. Mix together the cacao and agave until smooth, cream together with enough cashew butter to reach desired consistency. Put in a baggie, cut corner and pipe onto caramels.
Eat immediately or firm up in the fridge. Makes about ten 1" squares. The most I can get on the plate is seven.

I am definitely going to try making those, but mine won't look nearly as good as yours!

debilana, It you are referring to dalene's in Kirkland, then yes, I did the best I could to copy them. The first time I went there I posted pictures of what I bought on my blog, including their Auzzie Caramels. Would have liked to have their recipe. These look just like them, and taste almost the same. I was sorry to find out that dalene's restuarant has closed.

Hey Stina, you should do that! I started mine a few years ago and still add to it!!! Rawknitster had a FABULOUS blog with recipes! She's SO creative and encouraging!!! I'm always lurking on her threads!!!! :)

Silly newbie question - they are different?
I think I only have raw coconut oil that I got from Whole Foods. Where can I find coconut butter?

Not silly at all. It is confusing. :) Coconut oil/butter used to be the same thing. It may have been around the time Artisana came out with a new product and called it Coconut Butter that it became different. Coconut oil is the fat/oil only. Coconut butter has the coconut meat in it, too.
All that said, you could make these without the coconut butter. You can make it without the coconut oil, too. I used a bit of each to add creaminess and hold the squares together.
Have you checked out the thread for RP brownies? Basicially the same recipe only with cacao powder added.
