Hello, I have been mostly raw for about 7 months, including 100% raw for 4 months during which I felt pretty great. I "fell off the wagon" because of some issues with constipation and hair loss but this time around I am going to try to be patient.
I have a question about nuts: I eat a generous handful per day but have read that I should be soaking or sprouting them. I tried this, and find soaked nuts pretty unappetizing. Does anyone have tips on how to eat nuts in a healthy and tasty way?

I didn't like the soaked nuts either. I soak mine and dry them in the dehydrator and they taste much better.:)

Or soak them and blend them into smoothies and puddings.
Soaking and drying nuts is actually something the ancients did... and we forgot along the way. I love how raw food brings back knowledge from thousands of years ago.

I am confused about the whole process of "germinating" almonds and walnuts etc. I found this post on a search trying to learn more about the process and the outcome. My walnuts just got bigger- huge, actually. They lost flavor and I suspect the flavor was all in the soaking water- perhaps some of the nutrients, too. I am new to raw and mostly stick to salads, easy raw vegetables and things I know how to fix. Nuts are confusing even while following directions in the recipe. They don't look like they are doing anything but soaking up water.

Soaking nuts releases the enyzyme inhibitors. They digest better when soaked.:)

the enzyme inhibitors don't affect our digestion, or so says the latest research. sorry i can't link you to that directly, one of the science-heads on rawfoodsupport posted it.
the reason to soak nuts, seeds and grains is to wash away tannins and oxalic acid, and to activate the enzymatic process that increases nutrients in the nut/seed/grain etc. the idea that enzyme inhibitors on those things is detrimental to digestion is old science that has since been disproven so far as i know.
