I just bought a springform cake pan to try and make raw cakes in it. Does anyone have any ideas?

But of course, raw cheesecake! It's a smashing hit.
If I remember correctly you use
3 cups cashews
3/4 cups coconut oil
3/4 cups lemon juice
3/4 cups agave
sprinkle of salt
Mix in vitamix/blendtec til creamy.
Pour into the crust.
My fave crust is a mix of dry almonds, coconut, and agave. I don't measure...
Good luck! Add berries on top to make it look pretty :) Freeze for a few hours before consuming.

hehe check out the thread furthar down called cakes and pie oh my=) I made a layered fudge bomb! you could layer fresh summer fruits and nut creams on a date/nut crust too.:D

I love using my little springforms because when I make brownies or crackers the result is a nice square shape.
I second the cheesecake. It should have lots of calories for you and its really easy to make. I like Ani Phyo's recipe best although I tweek it a bit. Here is a thread on cheesecake with Ani's recipe.
