My parents are enjoying a bounty from their garden and find themselves with too much food for just the two of them. (If I ever regretted not living near my parents, it's now! :)) My dad called me this morning to ask if he can freeze corn for future use. Evidentally my sister has tried and it was mushy when she thawed it.

So, my question is: can raw corn be frozen and then thawed in a way that retains its flavor and consistency? Although my dad asked specifically about corn, I suppose the question would apply to other produce as well.

Can't speak for the corn. I'm thinking it would be okay to freeze it short term OR better yet make recipes and freeze them!
Then the greens? Blend and freeze. Hope this helps.

I have frozen corn before and I have not had the mushiness when I did it.

Of course it can be frozen. You can buy frozen corn at the store. It is generally recommended to blanch the corn before freezing. Either off the cob or on. However it will not be raw if it is blanched. If it is not blanched it might not keep as long. I really don't know.

I know my husband's aunt buys peppers when they are cheap. She cuts them in pieces and freezes them. She gave me some and they were just fine.
