View Full Version : Will this have ruined my eggplant parmesan?

I decided to try the eggplant parmesan yesterday only to discover at the tomato sauce that I was out of sundried tomatoes (used them all in the veggie crackers I made yesterday), so I put the assembled eggplant, oil, breading, and cheese in the fridge overnight while more tomatoes dried and then today was able to make the sauce and put the fully assembled recipe in the dehydrator.

Will being in the fridge overnight cause any problems?

hello, my guess is it is ok. not only that, but when we made this recipe last week, I didn't really like what happened to the sauce after mega dehydration, and now I add fresh marinara to eat it. I think next time I would just add the marinara after the rest dehydrated.

OK, well something else happened to it. I went to friends last night and got really drunk and when I got back home I fell asleep right away, so the eggplant parmesan spent all night and a good part of the day in the dehydrator at room temp.

Now is it ruined? lol

I don't know - look for signs and smells of spoilage, is all I can think of. Are you sure you want to eat this recipe?!!!
