What cereals (without germinating) can I eat raw?
What leguminous (without germinating) can I eat raw?
How do I do to eat them raw (not sprout) and healthy?

Not many.
Buckwheaties (sprouted/dehydrated buckwheat) is about the only "cereal" I eat.
Legumes? I rarely eat them.
Question? Why WOULDN't you wanna spout them?

It is a winter in the south of America
It is difficult to me to germinate. I need practical things.
I continue vegan diet of Dr Klaper
I am not sure of living healthy without them.
Is there raw balanced pyramid of food???

80/10/10 80% carbs, 10% fat, 10% protein (calculated by calorie) is a fruitarian, low-fat, food pyramid.
Another one is 69% fruit, 25% greens and 6% seeds (calculated by volume or weight? I don't know they didn't say) I read that on a webpage that was speculating about what longterm rawfooders eventually end up eating.
Now it takes years or decades to work up to this type of diet, and they plateau at this level on their own, so don't worry about forcing yourself to eat this way, if it happens it happens.

Legumes are VERY difficult to digest and were not among the foods eaten by early mankind. Even sprouted they are difficult.
Raw, hulled buckwheat is the easiest of all the grains to deal with because it soaks and sprouts easily. My daughter and I love Japanese food and so I've tried every version of rice, including wild rice, and have been very disappointed with the sprouting results, even after 5-7 days in the sprouter. They were still hard!! ... so might as well save your money and effort and not even try those if convenience is important to you.
Buckwheat is so easy, you should at least try it. Just put 2 tbsp - 2 cups in a jar, cover with 3 times as much water and soak overnight. With a cheesecloth or screen held firmly in place with a canning jar ring or a strong rubber band, tilt the jar to drain the seeds, fill the jar with water and drain again. Then keep the jar tilted at a 30-45 degree angle to continue draining and put somewhere with indirect light for anywhere from 1-4 days depending on what you are using the buckwheat for. Rinse and drain at least 2 times per day. No, it's not fast food, but you are virtually guaranteed good results.
Sunflower seeds aren't a grain, but they feel filling and satsifying in the belly like a grain. They also soak and sprout easily. You can stop sprouting them when they have tiny tails or wait until you have delicious 1/2" leaves and become a vegetable. It's up to you.

Phew! just reading this made me tired! Who has time to worry about percentages anymore? Not me...

A lot of people here, including me, follow a food proportion more like:
50% veggies
25% fruit
25% other (seeds, nuts, fats)
a lovely thing about avocado is it is both a fruit and a fat, and a nutritional powerhouse.
What is the grocery situation where you live? You said it was winter, but you didn't describe if you are by circumstances forced to buy local and dried storage-type foods or if you have access to a few satisfying non-local things like avocados.
If you have to used dried storage type foods you can always rehydrate dried fruits and make lovely creamy smoothies and sauces out of them, maybe with soaked and drained seeds or nuts blended in. Fresh is always better, but we eat what we can, right?

I have access to the avocados, after buying, they take 3 weeks in maturing.
Alive where the dry food has preservatives, I do not buy.
If I do not consume legumes or cereals, I think that my meal will not be balanced and I will not have health.
Is there rawfood diet designed by doctor?????
There is Raw Food nutritionist or doctor that he praises: to live alone with fruits, nuts and veggies??????
