View Full Version : What happened to my crepes??

I made Alissa's crepes yesterday and it was unbeleivable, I put the reamining unassembled crepes (the banana fruit leather) in the fridge to make more this morning only to find it hardened to a crisp!

Will they become flexible as they cool? I guess these would keep at room temp without crisping?

I'd really like to be able to keep spme done in advance and then be able to just put the filling and syrup.

Take them and pop them back into the dehydrator for a bit and they'll soften up. Might even consider placing a damp paper towel on top of them while they're in there.

But yeah, they crisp up...that is the same thing that happens to banana chips made in the dehydrator that I was explaining to others before who wanted the crispier banana chips as opposed to soft...refrigerating them will make them crunchy.

But yeah, we generally store fruit leathers out at room temp. in a glass canister but they never stick around long enough to know just HOW long they'll keep!

leftover crepes are rare in this household. Sometimes I just assemble them and stick them in the fridge to eat later. But that is only a few hours later because someone gets to them fast.

Thanks for the replies. After a while out of the fridge they did become flexible again.

By the way I noticed I asked if they will become flexible as they cool after comming out of the fridge, I obviously meant as they warmed lol.

Oh yeah...I forgot that you can simply assemble them (just fill them with the filling) and roll them and refrigerate then that way, all you have to do is let them sit out and pour your syrup on top. Thanks for reminding me Zellajuice!

LOL...yeah, I saw that and figured you meant to say "warm".

Glad to see how much you're enjoying the recipes! I'm thinking about making some rye crisps (the rye bagel recipe spread thin like a "bread" and dried to cracker stage) and topping with onion dip!

OH...just WAIT until you try the chili and top it with the onion dip! You're in for it!

I also warm my crepes up after I assemble them when they are freshly made. If they have been in the fridge for awhile I just eat them cold because they start to get the banana yuk thing if you keep warming them.
