View Full Version : Best Guacamole recipe please?

I have never had guacamole - ever! I don't know how to narrow the search down for this recipe fast enough and I also notice some use lemon juice instead of lime. So, dear rawbies, which recipe would you highly recommend?

This is my favorite, but it's mostly a matter of opinion. Sometimes I'm in the mood for tomatos or jalapenos or sometimes its just what's in my fridge! What I personally can't go without is the cumin. I love it! It's my favorite spice at the moment.

2 large avocados, diced or mashed
1 green onion, chopped
1 lemon, juiced
2 tsp cumin

Oh my god, never had guac? I live and die by the stuff.
Here's what I do:
About 5 really soft avos
A big tomato
1/2 an onion
salt to taste
lemon juice to taste (little at first!)

I LOVE guac...did I say that already? Haha

islesgirl--I know you've seen all the posts with all the add-ins, so I won't reiterate them.

I suggest:

With a potator masher, a pastry cutter, or a fork, mash 1-2 fairly ripe avos with juice of 1/2 a lime or 1/4 lemon and a little sea salt. Taste it. Taste it while it's a still chunky; taste it again as it gets smoother. Stop when you like the texture. You might like it just as-is!

(Unless you want avocado mayonnaise (which is pretty good!), don't use a blender.)

Everything else is just bells and whistles and no matter how precise someone's measurements are, they'll always depend on the size and ripeness of your own avocados, anyway!

We probably all learned to make it by "feel" anyway, and so can you! I promise!:)

I highly recommend the guac in Rawvolution recipe book if you want one with lots of ingredients.

Normally, I mash 2 avos and add diced jalapeno, cilantro, lime or lemon (they're both good although I prefer lime :) ) garlic powder, and a bit of sea salt. I love to put it on top of a big ole romaine salad or eat it wrapped in a leaf of some kind.

...now I'm off to the kitchen to make some guac - I'm hungry! ;)

I make a huge amount because I have a huge scoop with my salad every day, so does hubby and daughter. So I make enough to last for many days.
Today I used:
10 or so avocados (i usually use a potato masher but today I used my food processor)
In the food processor first:
6-10 small to medium cloves of garlic
1/2 red onion
1 jalepeno, 1 habenero, 1 seranno pepper (yes it did have kick but wasn't overly hot)
2 bunches of cilantro- love this stuff and more green in my diet..
chop this up..
then add the avocados. lime juice and salt to tast.
I blended this up and adjusted the lime and salt. Is soooo good on salads or dipped with flax seed crackers.

4-5 hass avocados, or one Florida(bigger)
1/2 red onion chopped
1 med tomato seeded and chopped
large handfull of cilantro, chopped
1 T cumin
1tsp ground coriander
sea salt
juice of one lime

chop onion and tomato and cilantro in food processor, add spices and avocado and pulse until desired consistency. YUMMY!

Thanks to all of you for sharing. I did make one today - my very first- in fact, I had never, ever eaten Guacamole before. I was just raving about it to my husband. (he said he tried it, but didn't like it at all), but I KNOW it was perfect. I know that if I'd had company and served it - it would have been enjoyed. No fear about keeping this recipe and using it again and again. I have it printed out and at this very minute, I can't even remember whose it is - sorry. It may have been from goneraw.com but I'm brain dead and ready for bed.:)

This I make once a week it is kinda of like the other ones:

2-3 avocados
1 lime
red onion -chopped
pico de galo
clinatro-chopped
1 clove of garlic minced
pinch of sea salt and ground pepper

I mashed the avocados in a bowl and then add the other ingredients and smash in also. Then last I add lime juice and mix and enjoy-yummy :)

I like using yellow tomatoes chopped
red onion chopped
small crushed garlic clove
1 avo chopped
pinch of cayenne (to taste)
fine grey celtic sea salt to taste
lime or lemon halved and squeezed

Mix and eat with spoon (my method) or dip cuke slices *drool*

Sometimes for an extra treat, after making basic guacamole, I'll add bunch of raw corn cut from the cob and mix it in. Great stuffed in red pepers or wrapped in romaines leaves. mmmmm
