I have made my own kombucha! I like it very sour.. so it took a month to get there!

But how do I get it to be super bubbly??? Like GT's???

I was able to get my kombucha to get bubbly by putting the tea in a clean store-bought juice bottle, capping it, and letting it sit for about 24 hours.

After you take the kombucha scoby out of the tea, re-bottle in smaller containers (I use the GT bottles), cap, then let sit unrefrigerated for another 5 days. At this point, I put them in the fridge. I've never had a problem with flat kombucha.

Oh me neither. NEVER have had flat kombucha, in fact mine is super, super efforvescent! I absolutely love it. And it's sooooo much cheaper to make. I also make the multi green version. But my fav is plain.

Well, darn, mine is pretty flat. A friend of mine who has been making it for 2 years said that if you add a little sugar to the bottom of the GT bottles when you decant it, it gives the mushroom bits something to feed off of and that will make it bubblier. I'll try leaving mine out for a few days though. I'd like more bubbles!
