View Full Version : Marinara Sauce OBSESSION!!!!

OK, you guys!!! I have TOTALLY :eek: FLIPPED OUT HERE!!!

Well, o.k... Not "Totally...." But, I just can't seem to get this MARINARA Sauce to come out RIGHT!!!! I can't get it to taste the same way I did the first time I made it !!! and it's driving me CRAZY!!!! :eek: Why can't I get this right!!!! Yea, it's good.... I'm using exactly the same ingredients... I'm following exactly what Alissa says... so why isn't this tasting right!!! I kid you not...I made this Marinara Sauce 3times today!!!! 3 times today and it tasted 3 times differently!!!! So I made: Pizza, then I made Lasagne, then I made Spagetti with Marinara Sauce.... Yes, I'm full of food, and everything was good, but does anyone else have this problem?

Oh yeah, been there.

Victoria noted this in one of her books as did Alissa. Tomatos vary. Could be sweeter, more acidic, etc. Each ingredient adds balance. Need the sweet, sour, tart, acidic. Maybe close your eyes and taste. See what seems to be lacking. Put in a little of that and taste again. Repeat until perfect balance i achieved. Adore marinara. Really also good with marinated mushrooms, too.

Where's Lasagne recipe? Whose did you use? Thanks for sharing. I know my friend made a killer one other night and waiting to hear back from her, if ever.
Tasted like meat chunks in their too. Sauce was orangish vs. red.

I made a very tasty one the other day from Rainbow Green from Dr. Cousens. It was tomatoes, sun-dried tomatoes, strawberries, plums, and raisins.

This is my favorite marinara sauce recipe. I don't really care for most of them out there either. I think the sweetness of the sauce and the saltiness of the olives is what makes this sauce good.

Puttanesca Pasta

Ingredients
1 zucchini, julienned or spiralized
1 medium tomato, chopped
6 kalamata olives, chopped
3 large green olives, chopped
3 sundried tomatoes, chopped
1 slice of red onion, chopped
1 garlic clove, chopped
1 handful of parlsey, chopped
1 tablespoon olive oil
1 small handfull of sprouts, to garnish
1 tablespoon pinenuts, finely chopped


Preparation
Julienne the zucchini and add a pinch of sea salt just to soften. Let sit while preparing the sauce. Mix the next 7 ingredients ( tomato to olive oil ) in a bowl. Drain the zucchini ( sometimes you will have some water to drain off from adding the salt.) and top with the sauce. I threw my plate in the dehydrator for 10 minutes just to take the chill of the refigerator off. Then garnish with sprouts and pinenuts ( parmesean!) Enjoy!!!

What was so different about the recipe the last times you made it?

I like to have extra soaked dates and sundried tomatoes on hand when I'm making marinara sauce in case the taste doesn't come out as I want. I find the sundried tomatoes (well, dehydrator dried actually!) to be the key to the taste being the most like the really tasty "traditional" recipes.

Oh my!!! This sounds WONDERFUL!!! I'm going to try to figure out how to make this, although possibly with a different berry (maybe raspberries) since strawberries are expensive and difficult to find around here. :)

I see you as very organized as we call it in USA. Sure wish I was disciplined and organized as your indicating in writings. I've tried all my life to be this way. It's super hard for me growing up with seeing piles around. I love stuff. Now if I knew you were coming I could pull it off and get the place looking nice.

Even my clothing..I leave lots on my dresser.

Thanks for sharing your tips. I'll be back for more. Maybe start a thread here called "getting organized in life."

Thanks so much for this recipe, roseyonnex! I have a hard time finding something I like on pasta. This is different than recipes I've seen in the past. I like pesto and the ususal marinaras but this seems like it's got some bite to it...olives!:)
