Does anyone know how I could make a coleslaw dressing out of coconut milk or cream?

I think coconut milk or cream would make a great dressing for coleslaw! I love creamy coleslaw. So I'm trying to find a way to make a raw creamy dressing for coleslaw that will keep for inleast a few day!
