For those who have - please share with me and others about the experience with making his cheese slices, or has anyone made any cheese slices - My hubby wants some sliced cheese, so I am a wonderful wife (his words not mine), and I want to please him.
Help me out here

I am at work, so I can't look up the name of the recipe I tried from Juliano's book. I made some kind of dehydrated "cheese" with corn. I did not really care for the taste. It could be that I messed it up somehow! So, if you try the recipe I am thinking of, perhaps cut the recipe in half.
Good luck and blessings.

Not sure which one you mean. Looking through the book now.
Not cottage, nacho, Mocksarella (flat), Pumpkin seed (blended until creamy); Sprouted Almond? Not Ricotta, and Almond Flower is like a pate. You sure it's Julianno's?

i tried two different cheese recipes, one tasted too much like lemons (probably i put too much lemon in, ha ha) and the other just didnt set up right. i am still trying, if anyone has a tried and true recipe, i would love it too!

I've not had anything sliced that I've liked yet, I've truly enjoyed all of Alissa's.
Have had sliced at a couple of restaurants. Not particularly cared for them.

The "nacho" layer in Alissa's nacho recipe is very good!!
Blend until creamy:
§ 1 large red bell pepper
§ ¼ c water
§ 1 c raw cashews
§ 1 T tahini
§ 3 T nutritional yeast
§ 1 ½ tsp. sea salt
§ 1 T minced onion
§ 1 clove garlic
§ 2 T lemon juice
Spread on teflex sheet and dehydrate. Slice as desired.
Don't remember where it came from, so if the author reads this please speak up.

Doe,
That was a mighty yummy recipe. I also used it for a filling in celery sticks and it was very good. Thanks...it will be a favorite.

I made this and it has lasted three days. Today it was a little bitter so I put in a teas. of honey and used it for a salad dressing. It is very yummy

Okay, I am finally at home with Juliano's book in front of me. On page 259, his nacho cheese - he recommends dehydrating for 5 hours or until cheese assumes a chewy-crisp chip texture.
I made this before and I find that it sticks to my teeth a little too much. I also, left out the orange juice, as it was a little too liquidy, in my opinion, to add more liquid.

Slice as desired.Has anyone ever tried making this? I'm intrigued to make something like Juliano's book but that doesn't call for corn (can't get organic corn most of the time, only that genetically modified regular stuff). Was wondering how good this was.
[Re the part about it being too sticky for one's teeth, perhaps just dehydrating longer would do the trick.]

I tried this recipe (as a cheese sauce on top of zuccini pasta), I don't own a dehyrator, and it is DELICIOUS! More like cheese than any other I've tried. My SAD friends loved it too. I'd love to try it dehydrated.

I'm going to slice up jalanpeno peppers to add to it, dice them.
I love heat especially in the cold weather. I can't wait to make it, YUM,YUM.
:D I think i will slice some broccoli top and spread this over it with some red onions and avocado slices on a warmed plate.
