Hi All!
I've just been challenged to come up with a recipe for Raw Shepherd's Pie. The reason being this dish has always been one of my specialties and I want to impress a good friend of mine with the tantalizing aromas of raw food (very health oriented). My basic original recipe consists of layering mashed potatoes, meat and various veggie often with a "taco" flavor, and multiple cheeses in a cassarole pan and baking. Over the years I've done vegetarian versions, but never a vegan version, and certainly never a raw vegan version ;-) I, my family, and friends, LOVE this dish (as well as my mac and cheese which is next on the list to recreate) so any suggestion are welcome :-) I'll be working diligently..

You might want to see what you can do with this "meatloaf" recipe for the meat layer (click link above)
could possibly do some sort of blended cauliflower with nutritional yeast (not raw) and seasonings for the mashed potatoes part...who knows or maybe nuts
you might also chops up a variety of veggies you plan to use and marinate them in seasoning and olive oil in a baggie in the dehydrator for a few hours..they will soften; or place them in hot (not boiling water) and then assembling the whole thing...

If you want something like the original version (meat, corn, potatoes), most walnut meat recipes like the taco meat would do for the meat, you could always use raw corn for the corn but I'd rather find something healthier, corn has many health problems, more than most other grains, and a cauliflower/nut mashed potato recipe.

I'm still working on it!!! :-) Thanks for all of the suggestions. I couldn't get to the recipe from lavender, but I'll try doing a search!
That recipe is from Quintessence raw restaurant in NY if you want to google.

The walnut taco meat substitute is amazing. My husband could not believe how good it was and he is a carnivore (but a very nice one! He loves the raw recipes I make.)
Mine is:
Walnuts
Sun Dried Tomatoes, reconstituted
Cilantro
Garlic
Onion Powder
Cumin
Sea Salt
I pulverize some/rough chop some of the walnuts in a Vita-Mix, put them in a bowl and add the rest of the ingredients to taste.
Of course, you could leave out the cumin & cilantro and have a different taste altogether.
Not sure if you use Liquid Smoke (I've seen some recipes using it) so if you can use it, perhaps a "smidge" of that? Just an idea..................
