I want to make a birthday cake or pie for a friend of ours who has candida. I know you are supposed to avoid the sweetener and sweet fruits.

Anyone have any ideas of something I could make that would be yummy and seem cake like but still follow the rules?

It will be served to a bunch of other people too - so it has to be tasty.

thanks guys!

I made a flourless chocolate torte that was great, throw a few rasberries on top
Pulse 1 and 1/2 cups walnuts till fine, add in 12 soaked dates, and 1/3 cup raw cacao powder (not cocoa) Scrape in a vanilla bean and process. Press out onto a plate and decorate with rasberries....yummy

As long as your friend doesnt eat the whole cake Im sure a little fruit wont hurt. Alissa's date nut torte is delicious.

I imagine it hard to make a birthday cake with no sweetener(including fruit). My best advise would be to make it a dark chocolate cake and add only a small amount of dates or agave for sweetening. Dark chocolate lends itself to being more on the bitter side so it seems like the best choice.
