I live in Mexico where it's hard to find anything unusual (for instance, I can find raw almonds, sunflower seeds and pumpkin seeds, but nothing like Brazil nuts r cashews). The other day I saw coconut oil! I bought a jar of it, but since it's so rare to find (and I will probably never see it in another store here) I don't know what to use it with!
Anyone have recipes that use it that don't call for rare ingredients, like raw cocoa, etc.?

I normally put coconut oil in my smoothies/milkshakes/ice creams. Is it the extra virgin type? It should smell like coconuts, most coconut oil is made with synthetic chemicals and smells like toxic chemicals.

Yes- it says it's cold pressed and organic. Also Extra virgin! I know! Who could ever imagine finding something like that in Mexico! :) I found agave syrup, but it's maple flavored and used as a pancake syrup for diabetics. Not exactly natural.

I actually make pancake syrup by adding vanilla and maple flavor to agave for my non-raw family. It's not bad.
As for coconut oil you can use it in anything. Add a dollop to a smoothie. Use it in crusts for dessert items. It also is my moisturizer of choice... works great on my dry toes and feet!
