We make this at Whole Foods for our raw food set. People love it, including SAD eaters:
1 bunch dino kale (or kale of choice), cut into small pieces
1/3 cup dried cranberries
1/3 cup pine nuts
1 cup grape tomatoes, whole
1 lemon juiced (or to taste)
3 T grapeseed oil (or any mild oil of choice)
Salt & pepper to taste
Rub kale leaves with oil and lemon juice, let sit for 15 mintues at room temperature. Add other ingredients, chill and serve.

I LOVED THIS SALAD!! I ate it before going raw and haven't eaten it since because it states in the ingredients that it has cranberries and sugar. The cranberries are OK but I didn't want the sugar.
I was going to post today to see if anyone had an alternative to the cranberries with sugar. I've been searching on the internet trying to find something similar with no luck. The pine nuts with the tomatoes and cranberry are just so awesome.
Now I'm craving it...

How about goji berries? But I know there are dried cranberries w/out sugar...

I will have to look for cranberries without sugar but of course, that sweet taste is what makes it!

I'll start posting all of our raw recipes :D . I've tried the salad using raisins instead. Tastes equally sweet without the sugar. The cranberries we have in our kitchen at Whole Foods don't have sugar listed on the ingredients. I've also used Swiss chard instead of the kale...also equally as good!

Thanks for posting the recipe as it gives me a base to start from. I really like the raisin idea!
The cranberries I've had are not sweet on their own, in fact they are usually quite bitter hence the reason most cranberry juice has all kinds of sugars added. I've bought the salad at 4 different WF's and the ingredients listed all say - cranberries (cranberries and sugar) and they use olive oil. I kept some of the labels because I always wanted to make it. I'm in Los Angeles so maybe they make it a tad differently here.
