View Full Version : Need some good pate recipes

Hello!

I find myself continually struggling with cravings for an old cooked standby -- a delicious veggie pate scooped onto rice crackers and hungrily devoured. I still don't have a dehydrator, so I can't make raw crackers yet, but I just bought a fabulous food processor this weekend and I'd like to tackle raw pate. I don't have Alissa's book yet either, but hopefully it's coming for my birthday since I've been dropping hints like crazy. Anyone have a great pate recipe to help get me over the veggie pate hump??

If you go to Alissa's site: http://alissacohen.com/recipes.html#mock she has her "Mock Salmon Pate" recipe listed amongst others that you can try on for size to get a feel for her book (though those few recipes are NOTHING compared to the book!)

This is a favorite of mine:

1 C. Cashews
1 C. Macadamias
lemon juice
garlic
salt or Nama Shoyu
dash of pepper
water to make thin enough to process

After you blend/process the nuts then add the others to taste. That's your base. You can add whatever you want ~ parsely, cilantro, red bell pepper, etc. If you leave out the garlic, you can add more water and some berries and make it into a fruit salad topping. You might do a search here for more pates and dips. Enjoy!

We had this tonight:

1 lb. almonds, soaked and drained
5-6 carrots, peeled
1 sweet onion
sea salt
honey
dried basil

Put almonds, carrots, and onion through Champion juicer with blank plate. Add sea salt, honey, and basil to taste. I'm sure you could do it in the processor, but it won't have exactly the same consistency. If you have a Vitamix, that would work well, too.

Also, do a search for Mexican Chereezo. I posted that recipe here a while back. It is delicious, but very spicy (although you could cut down on the spice).

Thanks for all these suggestions! I will pull out the food processor tonight and start trying them. I'll let you know how it goes!
