View Full Version : Filling tomato soup meal

I just created this filling/close to 1000 calories tomato soup:

3-4 medium tomatoes
1-2 cups spinach
2/3 cup walnuts
2-4 T olive oil
1-2 T onion
1-2 T Nama shoyu or 1/2 t Celtic or Himalayan salt
1 clove garlic
1 t italian herbs, optional
Cayenne or other hot spice to taste, optional

Blend all ingredients in blender and serve.

I made this last night and added an avocado. For some reason I thought it had one in it. This is so good. I'm enjoying it right now with cilantro/basil/nut pesto, flax crackers and kombucha tea.

Me tummy is happy!!!!

Wow, it goes up to abut 1300 calories if you add an avo. Did you make half or had it as multiple meals?

I've made another change to the recipe, I added about 1-2 cups of spinach to add some greens to it.
