Alissa's Apricot Cookies

Has anyone made these? They are currently in my dehydrator (and have been since last night). They are really delicious, but are still moist. I am wondering if they do get to the point of dryness or if they are just supposed to be a moist cookie.

I've made a few of the cookies, the lemon poppyseed are my favourite. They are normally still quite moist and chewy, not really a crisp cookie.
