Not sure what you mean by "prepare". As in what recipes to put them in ~ or how to eat them? simplest thing ~ make a salad, throw them on top, add dressing. Also, Alissa has them in a pad thai recipe.

i like mine lightly steamed.... since my body cant handle raw bean sprouts!

i enjoy the taste of lightly steamed alot better also :) i mix them under some beautiful bright greens... add olive oil... and presto... a yummy dinner :)

I like them wrapped with cilantro ,mint ,maybe a little-tiny bit of jalepino and juliano's sweet and sour sauce in a lettuce leaf -mmmm , as vietnamese spring rolls!

You can also use them in a raw stir fry. Rawkinlocs has an awesome recipe in the recipe thread.

Blessings.

I use them instead of lettuce in a salad. I think that I am getting more kick for my bite that way. (besides the organic lettuce supply comes and goes over here so I can not rely on it). I use a dressing made up of olive oil to which I have added dried Chilly, garlic and sun dried tomato and allowed to steep for a few days. Then I just add the rest of the stuf and enjoy

I made a raw almost hoppin-john kinda thing. Raw black-eyed pea sprouts, marinated (not very long - I was hungry) in olive soak liquid (from NFL's Moroccan Olives), garlic, onions, salt and pepper. Then added chopped tomatoes, onions, and some other veggies I had on hand (which I don't remember). Thinking some red/yellow bell pepper would be good in this.

My favourite is bean sprouts and mock salmon pate rolled in a sheet of nori

I've read in soy cookbooks that soybean sprouts should not be eaten raw. They need to be cooked first. Also, red kidney beans are toxic when raw, so just to be on the safe side, I wouldn't eat the raw sprouts from them, either.
