baby coconut water

I bought my first baby coconut today. It tasted a tiny bit bitter. Is that normal? I was expecting a sweeter taste.

Was both sides of the skin white? What color was the water? Im trying to think if it is bitter....I put mine in a smoothie with cacao powder and agave nectar so I can't remember. But I had two bad ones yesterday.....one side of the skin was purple and the water just smelled odd.

I think you were expecting a sweet taste because mature coconuts are on the sweeter side. Young coconut water has a nutty taste to me and the meat has almost no taste.

Interesting... I also have a question about coconut water:

If I do not happen to have any coconuts in the house, is there something I can substitute for coconut water in recipes? :confused:
