For Jenifae and all you tomato lovers:
Here is a list of quantities and ingredients. Only the first six ingredients are required. Everything else is optional. Taste test and adjust as you like.
BASIC RECIPE
2 cups chopped tomatoes
1/2 to 3/4 cup chopped fresh cilantro
1/4 to 1/2 cup finely minced onion (red, yellow, white, green, or any combo)
2 to 4 Tablespoons fresh lemon or lime juice
1 to 2 cloves minced garlic
1/2 teaspoon celtic sea salt
For spicy flavor: 1 teaspoon chili powder
OR: 1 t. cumin, 1/2 t. coriander, 1/4 t. cayenne pepper
OR: 1/2 jalapeno or more to taste
For extra zing: 1 t. apple cider vinegar and 2 T. soaked, finely
minced sundried tomatoes
Pepper lovers: any type of fresh chopped peppers (I like red and anaheim)
For sweetness: chopped peach or mango
You can eat it right away or refrigherate. The flavors change as it melds together. The cilantro and heat will intensify.
My favorite is with red onion, cumin, coriander, cayenne, and jalapeno.
Sometimes I like to add a fresh, sweet peach right before serving. I'll eat it straight for a soup. That's just me though, my husband doesn't like it sweet.
