Alissa has some (you can click on "Raw foods" at left). I have ordered from other places too, but she's got it at a fair enough price considering the market.

I got some at Whole Foods but the container doesn't say raw. The ingredients do not list anything but 'cacao'. So.. grrr! It's not raw is it?

I order mine from Amazon - Nutiva is the brand and it is (now) 26.60 for 2lbs with free shipping.

So.. does it have to say 'raw' on it to really be raw? I guess I will have to order it online..

I would make sure it says raw because if you read most cacao/cocoa powder packages they will say "roasted". I know Hersheys unsweetened says it on there.

The one I got doesn't say 'roasted' OR 'raw'.. I guess I will have to go to their website to try to find out, then..

I would assume that unless it specifically says RAW it IS NOT.

You are def correct. I heard back from the company today:

"Thanks for getting in touch with us regarding your chocolate question. The majority of the chocolate in the world market starts with the fermentation of the cocoa beans, which renders the beans to high temperatures. This is the first stage of making quality chocolate. During this process, temperatures can be as high as 150 degrees in the
core of the fermentation box.

"Then roasting the beans comes into play. Temperatures to roast the beans are usually at least 250 degrees; often times higher in commercial chocolate. Then, during the tempering process, the chocolate is melted at about 115 degrees.

"This is the basic procedure for chocolate making and the areas where heat is used. To answer your question, no, we do not make raw chocolate...we use the methods used for the past several thousand years."

So.. looks like I will be putting in an order to Alissa's store soon! :D (and bringing the cacao powder to work tomorrow too, along with a few other non-raw items)

Something about that last line from the company rubbed me wrong! It seems really condescending or snarky or something... And seriously, has that company been making chocolate for the past several thousand years? And have there been big machines like what they probably use for even more than 100 years? Ugh. Anyways, I'm smiling and shaking my head as I type this, not having a blood pressure crisis or anything. But not having the blood pressure crisis when something annoys me is... thanks to not using "those methods" with my food anymore. ;)

Anyways, that is great you're sharing with people who aren't raw. :)

Yes I also found that line to be kinda......snobby! As if: they "KNOW" how to make chocolate the only 'real' way that has been going on for thousands of years.

My co-workers are loving the free food I have been giving them!

Huh? What Makes Them Think They're Using The Methods Used For Several Thousand Years? I Think They Were Talking Down To You!

Yes they did seem to be, didn't they? I should write them back!! I should be like, "I don't need your whole life story, just tell me YES or NO if the cacao is raw!" :D :D :D
