View Full Version : Question on Alissa's Blueberry Pie recipe.
Blueberries are in season here in the midwest and I'm heading out this afternoon to buy a 5 pound box from a local grower. I have been so wanting to make Alissa's pie, but since it calls for 5 cups of berries it would have been too expensive with grocery store berries. Stores by me charge about 3.00 a pint! With blueberry season, I'm getting 5 pounds for 8 bucks!
Anyway...her recipe calls for ground up almonds...but, it does not say to soak them first. For those who have made this, do you soak the almond, then grind up? Or just grind them up?

I'm not 100% sure about this(someone correct me if I'm wrong) but I think anything she lists for nuts, grains, seeds etc... is always the soaked variety even if it doesn't state that. I think she says that in the book too but can't tell you where at the moment.

i made the pie for the first time a couple days ago. i was amazed at how it firmed up with just the blueberries and bananas. it tastes great too. i didnt soak the almonds, it didnt specify to do so. it might be better with soaked almonds, my crust was a bit grainy. i think you are supposed to soak almonds always, but i follow the directions of the recipe and if it doesnt say to do something, i dont. :)
about quantities (i am new too, so this is just how i do it) i often make too much of something and then not like it so i just make half of everything. i just cut every measurement in half. it always seems to work for me. also, i am the only one who eats raw in my house so i dont want to waste stuff.
the pie would be awesome at just half, just put it in a smaller pan. i find the desserts fit in just about any kind of dish.

Well, I'm home now and I have not just 5, but 7 pounds of blueberries!!!!! Tomorrow will be pie day. I am so looking forward to making this...I need something sweet!

I did not soak. When I soak, I often dehydrate anyway. I made the pie in cupcake tins - and it was my husbands breakfast for one week - loved it. I know the cost of freshe blueberries, and I was blessed to buy them frozen, so I use thawed those out and went to town. Hope you enjoy it - so that you know, I did not like blueberry pie before then.
I made the pie yesterday, and halved the recipe. Wound up putting it in a loaf pan and it is really good! I think next time I make it, I may try it with a mix of blueberries and strawberries.
