I just bought a bunch of them today for when I get off the Master Cleanse! I got ones in bags.. and was excited to see that many of the ingredients I will need (in general) are at Whole Foods. Will have to locate a few others though..
Anyway.. I still have one jar of sun-dried tomatoes in oil that is unopened. Am I correct to assume that the jarred ones are NOT raw? If so I will give them away at work, along with my bottled salad dressings.. :D

The ones in jars are not raw.

Jarred sundried tomatoes are not raw. Look for ones in bags (dry) that are dark brown in color. Bright red sundried tomatoes have been treated with sulfites to preserve their color.
Whenever I use vinegar, or raisins, or sundried tomatoes that have sulfites, I get a really bad headache. You may not react to sulfites, but they are still an unnatural food additive and probably not such a good idea.

That's a good point about the additives/preservatives.
The tomatoes I dry in my dehydrator are pretty red, not usually dark brown. They get dark if I let them get super-duper dry. I think that drying my own tomatoes is probably the best ... whenever I buy them for a recipe I throw what's left over in the dehydrator. My plan is to stock up this summer when they are plentiful and yummy at the grower's market. One year my Mom gave me a gallon jar of dehydrated tomatoes from her garden. That was great. But she and my stepfather don't garden like that any more.

Thanks for the replies, everyone! I thought as much, and will be bringing them to work to give away. (along with some bottled salad dressings)
