Raw Deviled Egg-less "Egg" Spread
By Heidi and Justin of Raw Food, Right Now!

Serves 4-6

1/4 cup pure water (add more water if needed)
Juice from one small lemon
1/2 clove garlic, peeled
1 1/2 teaspoons sea salt (or to taste!!!)
1 1/2 cups raw cashews
1/2 teaspoon dry mustard
1 Tablespoon apple cider vinegar
Turmeric, as needed for color (approx. 1/2 teaspoon)

1. Place the water, lemon juice, garlic, sea salt and cashews in the high speed blender, and blend until very smooth.

2. With a spatula, take the mixture from the blender and place in a medium sized mixing bowl.

3. Stir in the mustard, vinegar, and turmeric until it reaches the color and flavor you desire.

4. Serve on top of flax seed crackers, celery sticks, or add a bit of water to make a creamy salad dressing.

Shelf Life: Keeps up to 5 days in the fridge if sealed in a tight container. You can make this ahead of time!

I made it and it's pretty tasty. I put it on celery sticks. Crackers would be better.

Is this what you're looking for? It's straight out of Matt Amsden's Book. (I have to cut back on the amount of salt and the other seasonings though)

1/2 cup pure water
1/2 cup fresh lemon juice
1 1/2 teaspoons turmeric
2 cloves garlic, peeled
1 1/2 teaspoons sea salt
1 1/2 cups raw macadamia nuts or cashews
1/3 cup chopped scallions
1/3 cup chopped celery
1/3 cup chopped red bell pepper

In a high-speed blender, combine the water, lemon juice, turmeric, garlic, sea salt and nuts and blend until smooth.

In a medium mixing bowl, combine the contents of the blender with the scallions, celery, and bell peppers. Mix well and serve.:)

i dont think it would work. smooth and creamy almonds taste loads different than smooth and creamy cashews

yes it does taste different but it's not necessarily a bad difference :)

I had some almonds but not any cashews and my health food store has increased prices on everything.
But no matter if i use almonds or cashews i will make it:D

Are the nuts you get at the health food store really raw??? I read that sometimes they cook them. I hope what I get is TRULY raw.

How do you put the dish together?
Cashews have gone up, i went to the health food store today.
So how do you use the avocado and walnuts to take the place of the cashews?
Can't wait to try it:D i'm so excited and i have celery ready.

It is to LIVE for! Now that I have made it I would cut back on the lemon juice. Way too lemony. I am using it for a dressing on my salad until I can make a new batch and it is just perfect that way. I used cashews. :D

i usually use two avocados, a handful of walnuts (historically i have used cashews but i am trying to stay away from them as they aren't *that* raw), 1/2 teaspoon mustard, 1/2 teaspoon tumeric, 1.5 tablespoons apple cider vinegar, a little water. and if i am feeling naughty - some pickled relish (yeah, i know, not raw, but i am not 100 percent and well it really does add some extra charm!).

i bet you could substitute some of the cashews for zucchini or summer squash if you wanted to make it less expensive and lower fat. you'd have to experiment but i think it would work really well.

Made RAWvolutions eggless-egg salad again tonight. Soaked the nuts for 3 hours, 2 parts cashews, 1 part macadamias. Cut the recipe in half, but doubled the amount of celery, red pepper, and green onion. Served it on Lydia's Green Crackers. Definitely on my favorites list. Really appreciate that it keeps well in the fridge for several days.

Ugh, I made it last night and found it to be DISGUSTING! It was SOOOO salty. Wonder if I did something wrong?! Between the salt, lemon juice, and ACV, I felt really sick after eating it.

So sorry you didn't like it. Have you eaten turmeric before? It doesn't agree with everybody. Hope your feeling better today. :)

I made the RAWvolution version (no ACV). I really enjoy it, BUT, only if it's loaded with extra vegetables. I think it's better served chilled, after the flavors have a chance to meld for a few hours. Also, I like it best on Lydia's Green Crackers, they are very thick. If I didn't have those, might try it on celery, otherwise, no thanks.

On a previous occassion a non-raw friend tasted it before I added the veges. She thought is was disgusting. After I added the veges and it sat in the fridge for over 24 hours, she loved it.
