Oh yeah, I just wanted to double check that the Eden Shoyu I got at WF's last night is raw. It has the exact same ingredients as Nama Shoyu, and says that it is fermented over two years...I am 99% sure that it is raw. Does anyone know?
To my knowledge, no Nama Shoyu products are raw. They are all cooked in the processing (same as miso). They are considered 'Live' though because they have active cultures in them. I think many raw foodists use these products, and a few others, in small amounts to flavor foods even though they are not 100% raw.
If I'm not correct I'll count on someone to post otherwise.
