View Full Version : Any ideas to substitute nuts in recipes??

Hello,
I am new to the world of raw and in a real recipe frenzy, I don't really like too much nuts unfortunately so any ideas to substitute nuts with (besides using seeds)?
It's a bit too heavy for my taste.

There are a lot of recipes out there that call for nuts in which you cant even taste the nuts in them. Walnut taco meat is one of them. You cant even tell you are eating walnuts.
Its is pretty necessary to use nuts in a raw diet. You need the protein & healthy fats that they provide. I would suggest trying out recipes that use a lot of other things in them so you can't taste the nuts to much but still eating them.
I cant think of anything better to replace a nut than another kind of nut(or seed).

To make certain recipes a bit less rich and nutty, I'll sometimes sub some or all of the nuts with white mushrooms or cauliflower, depending on the overall taste and texture. It lightens up alot of my dishes without much of a change in flavor.
Be sure to account for the high moisture level in cauliflower when using it, though. I used it for the mock devilled egg posted here and omitted the water. Yum!
For creamy sauces, dips, soups, etc., mushrooms can help add bulk and substance, and will absorb whatever flavors they're blended with.

I've subbed some cauliflower for some of the nuts called for in the Eggless Deviled Egg Spread and it was great. Lighter but still taste and texture were fine. I think you could do that for taco 'meat' too.

zucchini/summer squash work the same way as cauliflower (cut the amt of nuts/seeds and use zucc) in some recipes - dips especially. makes them really creamy.
