I have a recipe that calls for Crimini mushrooms. Do you think the recipe would be changed too much if I used baby portabello or shitake? I haven't had much experience with mushrooms and the Crimini cost double what the others do. Or does anyone know of a good website like
"fungi for dummies"? :p

Definitely don't use shitake. That wouldn't taste good at all in my opinion. Portabellas are a closer match, but white mushrooms are probably the best match, though the reasons you see so many crimini recipes is b/c they have more nutrients than the white ones.

Oh thanks! That helps a bunch. I have a recipe for later that has the shitake. How do they taste compared to the others? I guess I am a little nervous about trying new mushrooms for some weird reason!

Even the smell of shitake makes me gag...I don't have a clue as to what to do with em.

Wow, I never knew that. Thanks you guys because I love Portabellos but was afraid to try a "new" mushroom.
