I am still struggling with this. They come out in pieces, not the nice crispy squares like I have seen...
Does anyone know if there is a youtube video showing it? I think I might be missing a step or an ingredient.

however..Karen Knowler..pop it in the search
as it will be similar equipment/weather/humidity for us here..probably best..take a look

Thanks so much rawdanceruk for sharing this with us. Now I have it in my "favorites" and should get something in the way of crackers that work! Actually, the "Ritz" recipe mentions using some water to make the stuff spreadable on the Teflex sheets, and I am pretty sure the recipe I used before didn't have that written in it and that would be why I fought to spread the cracker dough around (besides, I am new at this!) so I really appreciate your referring us to Karen Knowler.:D

Raw Danceruk and RawDrop - Oops, I made a mistake. My recipe for "Ritz" crackers is exactly the same as the one in the reference you made above to Karen Knowler's breads and crackers. It did mention to add enough water to make it spreadable! I must learn to READ! No wonder I had so much trouble spreading it out. They do taste so good. I will be making more this week.

Rawdrop, it sounds like you may be spreading a little too thin. Try spreading it thicker. What recipe are you using?
