I was wondering if this could be done by hand or even a blender, though I reckon it would be hard to dig out.

This can be done in the blender if the nuts or seeds are well soaked. I also found that it needs more water added in the blender so it comes out thinner. It's more like a hummus texture than a thick pate. It might also depend on your blender. Mine is an oldie and needs lots of liquid to work.

I make them in my vitamix blender, using the tamper. I don't know what kind of blender you have, so it may or may not work for you in your blender.
By hand would be really hard. Maybe grind them in a morter/pestal, then add the wet ingredients?

Hey, what about gringing the nuts in a coffee grinder, then make the pate from that?
Just thinkin' out loud...
...mmmmm, nut pate....
...maybe I'll make some today to go in my lettuce wraps!
