everytime i make raw bread in my dehydrator, it always stays very moist in the middle and has this odd (almost fermented) taste. i've tried several different recipes at this point and i can't seem to get it right.
tomatoes will be in season soon and tomato salad with bread is something we enjoy very much at my house. i'd like to figure out a good bread recipe before then.
any suggestions?

My only suggestion is to make the bread thinner. Either make a shorter loaf or a skinnier one. Otherwise it might not dry thoroughly.

The only bread I have tried to make is the onion bread. I shape it into individual pieces using a flexible scraper and allowing plenty of room between the pieces. This works for me.
The onion bread is delicious with tomatoes but it is a flexible bread. Instead of making loaves try shaping your bread into slices so that it is thinner. The Mediterranian almond bread recipe dries well and also tastes great with tomatoes. Carmella has the recipe in her blog.
