Just brought some home from the store... Ideas on what to do with them?

I have been craving the cooked version of both... so I really need some good uncooked recipes.

Here Goes.......I can't remember who posted it to give them credit.

--butternut squash spanish rice. I had this today, and went out tonight to buy 2 more butternut squash!

1 butternut squash, pulsed in food processor until rice looking. Then stir in
handful chopped cilantro
chili powder
salt
cumin
cayenne
olive oil
I also added and/or could enjoy adding--tomatoes,yellow onion, scallions, garlic, bell peppers, corn, olives, avacado

For the help and ideas! I don't have a huge food budget, so I hate it when things go off before I get to use them. So, I will be in the kitchen this after noon making some yummy's with the squash and sweet potato.

...and it IS good, JUST DON'T add too much cayenne...LOL (like I did). And, I LOVE spicy foods!

I folded in corn, avocado and lime to cut some of the "HOT". Also wrapped it up into a raw dill 'cheese' tort. I had a few bitter raw olives on the side and it was GREAT!

Would love to know how you like this one if you make it, RawDrop.

I've been eating raw sweet potato slices doused with lemon juice and salt. MMMMMM! It satisfies that salty/sour/crunchy munchy feeling I get ever so often. I haven't tried it yet, but lime juice would probably work well too...

I would do "chips" with the sweet potato

and make noodles with the squash.. spinach pesto and crumble "cheese" on top..droool...:)

I didn't make it. I bought a small package from Raw Vegan Source in Redmond Washington. Sorry... They are RAW and yummy, and I've not had the patience to figure out a good tort recipe yet. I much prefer something like this over lettuce/collard leaves.

If you (or someone) comes up with, or knows of a good raw tortilla recipe, I'm are ears....:D

How do you make noodles out of the squash? I've got about 2/3 of one leftover from making spanish 'rice' and I don't know what to do with it, so I've been looking on this thread for ideas before it goes bad. Also, what would you use as 'cheese'?

I have done the noodles, I have done the juicing?!?! I need more ideas! I am the only one in my house that raws, so one butternut squash goes a long way. Long long way!

Any other dessert ideas??

Would use a veggie peeler or spiralizer to make noodles

do pesto with spianch, basil-- can add oil or blend with pine nuts/or sunflower seeds

cheese; cashew cheese round or a sunflower/pumpkin seed round

have left info in the "cheese" thread.. but its basically chad sarnos recipe
