The health food stores here only sell coconut oil not butter. I do notice a big difference in the health food store coconut oil compared to the regular store coconut oil. The ones in the grocery store have a not so pleasant taste. I tried a tiny bit just to compare. The one from the health food store is lighter and sweeter. Can I sub coconut oil for butter?

Try this for a coconut butter substitute: Mix coconut oil with cashew butter.

Coconut oils do vary greatly. I find the tastiest ones will have the following three qualities: raw, organic, virgin. Recently found a new product on the shelf along with other nut butters from Artisana. It's raw, organic, coconut butter; it's made from coconut flesh with a little oil on the top.
