Just finished a most delectable dessert for breakfast. Gathered inspiration from 3 different recipes, one I saw here a few days ago. I don't measure when I'm making something new. Using my best guess on quantities. Adjust as you like.
Ground 2 T. golden flax seed. Blended it with 2 very ripe, peeled, chopped peaches, 1 T. honey, 1 T. agave, 1 T. lemon juice, seeds from 2" of vanilla bean, cinnamon, grated nutmeg, and a tiny pinch of sea salt. Put it in an 8"x8" glass dish.
Gently folded 3 thinly sliced peaches into the "pudding".
Dotted the top with a "crumble" made of about 1/2 cup of walnuts, 4 chopped medjol dates, a dessert spoon of Artisana coconut butter/oil, dash of cinnamon, and a tiny pinch of sea salt. Processed it (in a magic bullet) until it was crumbled and sticking together. (Going to work on perfecting that into a candy all by itself, tastes a little like caramel.)
Put a lid on it and set in the fridge. After about 30-60 minutes in the fridge it will set up. Something in the freshly ground flax seed makes it gel like a pudding.
Since I ate so much while I was taste testing I'm going to save it for later.
Will have to try making it into a fancier looking "pie" on a raw crust to impress my friends and family with.
