I was wondering.... Dairy cheeses are made with milks and types of bacteria.
During my research, I have learned that many of these bacterias don't need to be cooked to form the cheese.
Does anyone know if those bacterias would work on nut cheeses? And if so, would it be okay for raw?
Has anyone heard of any of the raw gurus researching this at all?

I once read or saw posted Chad Sarno adding probiotics to his nut cheeses to culture them. It might be in his Vital Creations book or online...can't remember.

I also use probiotics for nut cheese. I have enjoyed them, but they are still like cheesy nut pulp. I found an article about some people in NYC who are making awesome raw cheese. It can be found at the NY restaurant Pure Food and Wine.

I use Chad sarnos basic idea..for cashew cheese to make sunflower, pumpkin and cashew cheese
blend with little water, add your probiotic or little miso(I love it with miso), put into a bowl in cheesecloth, cover overnight.
OR.. What I often do for nice dry rounds, wrap tightly in a cheesecloth and hang overnight..the "whey" drips into a bowl
leave to ferment
In the morning can season, add chives..or spices..then form into rounds or use as cream cheese..whatever you fancy!!

I ate at Pure Food and Wine when I was in New York last winter. We ordered the cheese plate and it was unbelievable! I was with 2 S.A.D. peeps who said they thought the cheese tasted "real." If the chance ever arises to eat at Pure, jjump on it!

What does fermenting nu cheeses do to them taste wise? Does it start tasting like dairy cheese?

I made a batch of "real cream cheese" from macadamia nuts using the recipe on goneraw.com. The texture was creamy, almost like whipped cream cheese. The flavor was a little bit sour, like yogurt. It was fine. I like it!
