View Full Version : Quickie lunch and dinner idea.

I start out in the morning slicing tomatoes into quarters and soop out the seed pockets of each quarter.
I put these in the dehydrater and pour olive oil over them, put olives in the oil along the tomatoes and turn dehydrater on and let them warm.
Throughout the day if i want soup i have warm tomatoes to just blend up and the olives have already soaked in the oil.
Also i can dice the tomatoes up for a roasted tomato salad with olives along with slices of red onions and seasoning and sliced avocado.
I can take the tomatoes out and leave them quartered and make guacamole and put on top for a snack.
For dinner i can make raw noodles and blend up the tomatoes with the olives and make a roasted tomato sauce along with a red pepper and spread over the noodles along with diced olives and red onions, yum, yum!
Also if you like eggplant, slice it and put in the olive oil along with tomatoes and olives, it will be nice and juicy and you can make a stack with lettuce, sauce, olives and avocado for dinner. It is delicious.
I keep tomatoes in the dehydrater and replace as needed.
If you love tomatoes this makes for an easy day of meals for a day or two:D

I'm going to take the eggplant and grind it with sunflower seeds and some flax seeds for meatballs to add to the noodles this evening.
Soaking all in olive oil just adds to the flavor of everything i make.
I had the tomatoes with guacamole this morning, all warm and good.
Now i'm eating raw peas and tomato sauce:)

Your weightloss is great.
Is it true that you have to do a MC with no food at all during the cleanse?
I would love it if you'd post some so please look around and find some old and new pictures:D please.

Sounds delicious! I was wondering if eggplant could be eaten raw.

You're suppose to add some salt to get the bitterness out.
I sliced mine in rounds and then sliced them lengthwise and i will add these to the olive oil and olives and tomatoes in my dehydrater for dinner.
I'm going to have raw noodles topped with roasted tomato sauce and diced olives topped with the roasted eggplant for my dinner tonight:D
It took a long time to get my hubby wanting to eat raw and i'm trying to keep him interested, it's doing wonderful things for us both.
His blood pressure is normal but he's still on medication for it but it's cut in half:)
And i'm seeing some more weightloss after a standstill in that area.

Bethanie those ideas are just wonderful! My mouth was watering. I am trying to collect quick, flavorful ideas for lunches and this will work great! Thank you!

It's like he forgets it's raw and it needs time to get ready in the dehydrater:D so that is what came out of that plea for quick meals.
Anyone else is welcome to add to this quickie meal idea, please.
Sometimes we all need meal support:)
