I just made almond milk, and I have a ton of leftover chopped almond bits. I don't want to just throw it away. Could I use this in anything?

You could make "donut holes". Use 1 c. of the almonds. You could take 1 c. dates and 1 c. chopped dry pineapple (or 2 c. of dates if you don't have the pineapple) and mix in food processor w/ a dash of salt and a dash of vanilla and then mix it really well w/ the almonds. You form them into little balls and you can roll them in dry coconut if you'd like. They're yummy.

FWIW, I realized that I mostly use almond milk for smoothies, and it dawned on my, why strain it? So I just use the full concoction nowadays. When I was straining it, I had a freezer full of almond pulp and could never find enough recipes for it all - although recipes abound these days. But if you don't find one right away, just throw the stuff in the freezer until you do!
