Anyone have any good recipes for Portabella mushrooms? I have once again bought 3 of them, I keep trying, but I can't stand how dry they are, like when you fill them w guacamole, that darn mushroom is still dry and I'm trying so hard to forget it's fungus I'm eating!!! So we're gonna have to marinate it I think... any good recipes anyone?? :D

I love to marinate portobellos-
extra simple=
cut portobellos
olive oil ( a lot)
nama shoyu
cayenne pepper
this really helps me with salty, meaty cravings
also simple=
portobellos diced
olive oil
salt
garlic
tomatoes
Marinate together, then toss with romaine lettuce, yum
They will drink up any marinade and become a very satisfying hearty--and juicy dish.

Yep, I was going to say marinate!! Ports are really spongy and like to suck up the flavour of anything you marinate them in. So, not only are they going to be moist, but really flavourful as well!

Have to have one every few weeks! I use a spoon to scrape off the "feathers". Slice it thin. Marinade in olive oil and shoyu, (3 to 1). Season to taste with chopped garlic, dried thyme, and cumin. By the time I wash the romaine leaves, slice the tomato and avocado, the mushroom is ready to eat. Usually have it all rolled up in the romaine. If you don't like to get messy, try it as a salad.
I don't know but the title of this post had me crackin' up! :D
