There's a strawberry pie in Alissa's book that is good. The filling is simply fresh strawberries pureed with very ripe bananas and you pour into a date-nut crust. I chilled ours in the freezer a bit. The kids and DH liked it enough, though they wanted whipped cream on it :-)

The blonde macaroon recipe is in the book Raw food - real world. And yes, they are incredible. It's the macaroon recipe but the blondie version of it. There is also a freezer fudge recipe in that book which is REALLY good.

I pulled these out of another thread. They are Sarma's recipes from RFRW

Blonde Macroons

3 cups died, unsweetened coconut flakes
1 1/2 cup fine almond flour
1 cup maple syrup
1/3 cup coconut butter
1 T vanilla extract
1/2 t sea salt

1. in a large bowl, combine all the ingredient and stir well to combine. you can also use a standing mixer with the paddle attachment.

2. using a small ice cream scoop, your hands, or a big tablespoon, spoon rounds of the dough onto dehydrator screens. if you are using your hands, it helps to refrigerate the mix a bit prior to forming the macaroons. Dehydrate at 115 or 12 to 24 hours, or until crisp on the outside and nice and chewy on the inside.

Chocolate Macroons

3 C dried unsweetened coconut flakes
1 1/2 C cocoa powder (I used cacao)
1 C maple syrup
1/3 C coconut butter (I used the creme de coco virgin kind, and melted it in my dehydtrator first)
1 Tbsp vanilla extract
1/2 tsp salt

In large bowl or standing mixer combine all ingredients thoroughly.
Using a small ice cream scoop (I used a cookie scoop it worked beautifully) your hands or a big tablespoon, spoon rounds of dough onto teflex or parchment paper.
Dehydrate at 115 degrees for 12-24 hrs or until crisp on the outside and chewy on the inside (I did 105 degrees, and I just passed the 24 hr mark)

Hope this helps!

Strawberry Pie, Alissa Cohen (pg 522)

Crust
2c almonds
1 1/2c dates, pitted soaked
1c strawberries, diced

Process almonds in food processor until fine. Add dates and blend smooth.
Place in bowl and stir in diced strawberries. Mold into pie plate.

Filling
3 1/2c strawberries
3 very ripe bananas

Dice 1/2c strawberries, set aside. Process remaining strawberries and banana until smooth. Place in bowl, stir in set aside strawberries. Pour mixture into crust.

The blonde macaroon I'm guessing is not an Alissa recipe (can't find in book), so a Google search should help with that.

Happy searching....
