View Full Version : Pine Nut Mayo

By special request...here's my pine nut mayo recipe. It's smooth and creamy. Will thicken a bit in the fridge. Keeps for several days. Spread on crackers or tomato slices, top with sprouts or micro greens YUM! Add a little water to make it a salad dressing. I make it in a nut grinder, or the magic bullet.
1/2 cup pine nuts
1 small clove garlic
3 T. lemon and/or raw vinegar (I like a 1 1/2 T. each)
1 T. agave, or honey
1/4 t. celtic sea salt
1 T. olive oil
Grind pine nuts until starting to look creamy. Add rest of ingredients, except olive oil. Blend thorougly. Add olive oil, Blend lightly.
I don't get to caught up in measurements. Taste test it and adjust to your liking. Enjoy!

I had been buying the tofu dressing from our healthfood store and i didn't buy it this time hoping to be able to find a raw dressing.
Now i have, thank you so much for posting the recipe.

Great another raw mayo to try! I haven't been satisified with any of the ones I have tried so far and I have tried several. I'll be trying your recipe soon!. :)

Oops, I forgot to ask if the pine nuts are dry or soaked?

Just dry pine nuts. Haven't tried soaking them. Usually I just make it impromptu. My husband and his brother put it on their salad last night. They liked it, too! Was that a big bag of pine nuts I saw in the picture you posted of your fridge?

I love them mashed up and blended for salad with avocadoes, yummy.
My hubby thinks they have a bitter aftertaste but he thinks dates taste funny:D
I hide them in his smoothies:p and brownies.

Sorry Rawknister I didn't check back here until now, but yes - that was a big bag of pinenuts in the picture of my fridge~ :D
