I came up with this little treat today while experimenting :)

2 cups cashews
1/4 cup coconut oil
couple pinches of salt
Agave to taste (I used almost a tablespoon)
Splash of vanilla . . . about a teaspoon, maybe 2


Grind the cashews into flour in a coffee grinder, melt the oil and mix everything together.

I promise you, it tastes like the batter to those shortbread Christmas cookies that come in the tins :)

Sounds good to me!! I will be trying this one. So did you just eat the dough or did you try to dehydrate some cookies out of it?

I'll be making these tomorrow, thanks for the idea! I think Im going to add some pumpkin pie spices to make a snickerdoodle!=)

I just purchased a bag of almonds and have soaked them and sprouted them.

Miss Marie!!!! (Love the name by the way ;) ) Bless You!!!! It's so funny because I was craving cookies like that and was trying to come up with a recipe. Mine was somewhat similar, but I was soaking the cashews. I didn't even think about making a flour out of them....Genius!

I didn't try to dehydrate them, because I figured with all of the coconut oil, they probably wouldn't harden - but I'm curious to see what would happen.

I ate most of it like raw cookie dough - but I did take the last of it and roll it into balls before popping them into the freezer - those were yummy too :)

No, because they will come out chunky instead of a flour. It might taste the same, but not have the same texture. I guess it depends on if you like it chunky or not :)



Do you think sprouted almonds would work? I think it may change the flavor. Something about the sweetness of the cashews mixed with the coconut oil, gives the cookies that "shortbread" taste - though, I haven't tried it with almond flour - so it might still have that flavor. Or, it may taste even BETTER! It's all in the experimenting ;)

how do u melt the oil?

You can put the jar in some warm water, or in the dehydrator. Coconut oil melts at pretty low temperatures. :)

My coconut oil has been in the melted state up in my cabinet since May. Did I mention I live in the south...the deep south?

The recipe sounds wonderful. Love a sweet raw cashew!

Either there is entirely too much oil in this recipe, or the grinding of the cashews (or macadamia nuts) in the coffee mill is an extremely important step. I just used the food processor-- Oil was literally dripping through my fingers as I formed the cookies.

I added cinamon and pumpkin pie spice and the flavor was goodish, but I had to freeze them to get them to hold together at all. Next time I will use much less coconut oil.
