I just tried Alissa's Kim-Chi recipe and it was soooo good. I'd never had Kim-Chi in my life before that. I saw some in a jar at an Asian market and it looked so gross. It almost put me off of trying Alissa's, but I tried it and it's so good. I had it rolled in a romaine leaf with the mock salmon pate in Alissa's book. I love that stuff, too. I think the mock salmon pate is just as good made with sunflower seeds as it is with walnuts, and much easier on my budget. I love her marinara sauce, too. With food like this, I can stay raw FOREVER! :)

You know, most Korean Kim chi's are raw. I was born in Korean and was raised on the stuff. It is basically a spicy saurkraut, only much better.
In Korean, when they make it, the use really really large earthenware pots and then bury the Kim chi in the ground for months. I do not believe that they are allowed to do that now, because of food standards, but traditionally that is how it is made. It is usually a family thing. The kim chi pots get handed down within the family.
I buy kim chi all the time. I love the stuff!!

Thanks for the info.....I've never tried her Kim chi and I've never thought about using sunflower seeds vs. walnuts. I have tons of walnuts but I have to shelll them every time I want to use them and it takes alot of time....although I love using them.
