I do love the pesto stuffed mushrooms SOOO much...
has anyone used any other stuffings besides the pesto?

I want to make stuffed mushrooms a regurlar thing but i would like some variety in the stuffing..... got any suggestions?

I absolutely love Mexican Chereezo by Serene Allison stuffed into mushrooms.
It is actually like a spicy carrot hummus.

4 lg carrots
1/2 mild onion
2 T. olive oil
1 1/2 tsp. salt
1/2 tsp. cayenne pepper
3 tsp. cumin
1 big lemon, squeezed
1 tsp. oregano
2 c. almonds (I only use 1 c., as 2 cups makes it too thick)

The directions say to make this in the processor, but when I did that, it did not turn out well. I talked to Serene's sister, and she said she makes it in the Vitamix, so I tried that, and it came out perfect! I LOVE, love, love this.

wow that looks great....i'll try it !!
but most likely i wont use as many nuts.
I try to increase the veg content of recipes and leave out all but some nuts or it gets too heavy for me. like when i make pesto...i use only the basil LOTS of garlic, salt and just a tablespoon or 2 of pine nuts or walnuts... very very little. that way i can eat more of it.....

I experimented the other day with stuffed mushrooms.

In a food processor I blended up:

1 sm. tomato or 1 plum tomato
A few soaked sundried tomatoes
3 or 4 large basil leaves
2 cloves of garlic
Celtic sea salt to taste

I blended it all together lightly because I didn't want the basil to get completely blended. Then I stuffed the mushrooms and dehydrated for a while.

It's like a mini italian meal! Very flavorful and reminds me of the simple italian meals I have enjoyed cooked.

Oh and I think a good variation on this would be to add some hot pepper flakes for a spicy kick.

yeah... that also sounds good.. i will try it.
I think if you use the mushrooms as a base you can creat all kinds of stuffing to emulate all sorts of flavours of all kinds of cusines. thanks for that recipe... it does sound delish.

I love to make those stuffed muchrooms from Alissa's recipie but I don't have a Dehydrator. Can I eat them just like that????

Yes, you may eat them without dehydrating them - I love marinated mushrooms and stuffed - great!

I'm not SweetLips, but ... you just make a marinade of olive oil, Nama Shoyu, lemon juice, garlic and maybe some herbs. Toss the mushrooms in the mixture, and let them sit for a while. It won't take long till they "soften" and they're like sauteed mushrooms.

You can also do a search on this site because marinating mushrooms and other veggies has been discussed here many times before.

Also, there's always Alissa's recipe for Marinated Portabellas in Ginger Vinaigrette although you can make it with any mushroom ... or any vegetable, actually. It's on page 295 of her book.

I made the Pesto Mushrooms for the first time last night. I put them in my dehydrator this morning so they will be ready at lunchtime. My house smells like an Italian Restaurant right now....mmmmmmm....... :D
