Hi samadhisoul. I just made it and it has to be one of the tastiest raw recipes I've ever tried. Mmm good! Thanks for the advice. I will have just what you suggested. Ooh, I was trying to get every last drop out of the Vitamix! I am still open to anyone else's ideas for all the times I will be making this and there will be lots of them. Goodbye to SAD food, yessiree!:)

THe Taco Meat....what recipe are you using? I've wanted to try that for a while now and do have walnuts in my freezer......:D

deberaw, that sounds about right - I should have known. Heh heh. Here is the recipe: So.......o good! Mmmm.
Walnut Taco Meat:
1 1/2 - 2 cups walnuts ( I used 2)- unsoaked - ground up in fp first., then add
2 tsp. Taco seasoning, 1 tsp. chili powder. Mix in fp. with walnuts, then
add 1 1/2 -2T (I used 1 1/2 as I am new at this and a bit cautious now)
Braggs & mix again.

My bf make Amazing raw corn chips and tortillas for our nut taco meat.. That jerk won't tell me how........;) I am sure you can find a recipe - but some of our fav meals are:

raw tacos
raw nachos!!!
taco salad

Don't forget the guac!

I eat my walnut meat wrapped up in romaine leaves or on top of a salad. I also use the cheddar sauce as a veggie dip or it is good on top of a raw pizza.

I thought I was the only one that reached my fingers even around the blades to scrape out my vitamix! DH is like, "I can't watch you do that" as I get cheeze, or tahini, or chocolate pudding up to my elbow and all over my face :-) Luckily I have been like this since we met.

I'm starving! I have been happily waiting all day to have my cheddar sauce and taco meat for supper. All these things sound so good and I think I will be making a lot of this sort of thing. Thanks for all your input dear friends.:)

stuffed in bell peppers, jalapenos, chile peppers and tomatoes...yummmmm and with the cheddar sauce...yummmier!!

Jen, you just reminded me of the open-faced tuna or salmon melts I made for my family and the stuffed tomatoes with salmon salad or tuna salad topped with cheese. Now I could do the same thing raw with tomatoes, mock tuna or salmon pates and the raw rich cheddar sauce! Can't wait. I'm off to buy more groceries tomorrow.

I posted this recipe because I couldn't believe how incredibly delicious it was..though I kicked up the heat with some jalepeno. It was soooooo simple and I actually forgot to soak the nuts (or didn't know if I should ) and it turned out so great....I chose to "warm" mine in the dehydrator and then put it on top of my nachos....wow, so filling I couldn't eat the big plate of nachos....why am doing this to myself...thinking about tacos with a fridge full of nothing but my lemon-lime ginger-ade drink I made.....it was either buy food or buy gas for the car....the car won:D

Salsa Walnut Meat

1 cup walnuts
3 tablespoons chopped onion
2 tablespoons chopped red pepper
3 tablespoons chopped celery
½ cup chopped tomatoes
2 tablespoons fresh cilantro
¼ teaspoon garlic powder
1 tablespoon lemon juice
dash olive oil
dash apple cider vinegar
½ teaspoon salt
½ teaspoon cumin
dash chili powder
½ teaspoon oregano
1 tablespoon nutritional yeast
1 teaspoon honey

Preparation
Place walnuts and chopped veggies in the food processor and pulse a few times. Add remaining ingredients and process until well mixed.

lavendar, this sounds really good and I will try it tomorrow after I shop for more food. It sounds milder - like something I'd prefer and I like the sound of the veggies in it. A question for you though - do you remove the seeds from the tomatoes or use the whole thing? And, I'm not sure if I will like the Cilantro (I know I didn't years ago in a SAD recipe) - do you use it? I'll see if you get back to me before I go ahead and make this. Thank you so much!

I used the whole tomato..

I know lots of people who can't stand cilantro which I don't get cause I love, love, love the stuff. I guess it's true-people say it's an acquired taste. You might want to throw it in there if you don't like it... You might fight the "meat" thick when it comes to spreading and need to add a few drops of water of something liquid for more spreadability (is that a word) but I just couldn't get over how the flavors pleased my palate...most of the time I don't like things and have to totally overhaul them...

I think I'm going to dream about nachos with salsa, pico de gallo, guacamole and walnut taco meat tonight:)

Hope you find a recipe you like...let me know how this one worked

Lavendar, I was too busy today to make your recipe but I added avocado, tomato, and celery to my walnut taco meat and then it was much better. Thanks for all the suggestions, rawbies.
