View Full Version : Aubergine/Eggplant ideas!!!

My local Lidl is having a special on aubergine/eggplants. I can get three for a quid ( 3 for $2.00). Any ideas for preparing them??
I need pretty simple ideas. Probably nothing that uses a dehydrator as mine homemade one isn't working properly. ( I do have a fan oven, but not sure if it goes low enough).
Any and all help welcome and much appreciated!!!
This recipe for eggplant tacos is delicious but it requires a dehydrator...maybe you could use the oven at a low temp or just marinade them for a while to soften them. I dont really care for raw eggplants unless they are dehydrated.

Yeah I would say use the oven low with the door open..voila

Otherwise myself.. I would salt them, marinade them..in a simple rub-- maybe some garlic, fresh herbs, lemon juice. Then food process them along with some other ingredients and make "meatballs" -- maybe mushrooms, sundried tomato, aubergine and fresh herbs? ..with some raw pasta.. YUM!
