Okay, I don't know how many of you have access to this, but the other day my food coop had SAPOTE for sale. It's expensive (mine was $15) but if you have the chance to get it, get one!

Once my fruit was ripe (it gets squishy and soft), I mixed it with coconut oil and honey in a bowl. It now tastes JUST LIKE the filling of a pumpkin pie, except obviously a healthy, raw version. It's creamy and soooo sweet. You could definitely put it over your favorite raw crust, refrigerate for a couple hours, and have something that no one would be able to tell was not pumpkin pie!

Totally worth the $15, and will probably provide a yummy snack/dessert for me and my boyfriend for at least a couple days.

another substitute I found was carrots. I always have them around and was making a carrot cake (Alissa's) when my son asked if we could not put walnuts in them. I always add pumpkin pie spice to my cake so the flavor was already like pumpkin pie. I processed it in the food processor and moved it to the blender to make it extra smooth. Made a simple walnut date crust and topped with a cream. No one would have ever guessed that it was carrots and not pumpkin.

I just had zapote for dessert after my salad. It was dang good. I had a black one and it I think it cost around 50 cents. Of course, the $700 plane ticket to get to central Mexico balances out the cost! I'm going to try making it into a pumpkin pie as that will spice up my diet while I'm here (2 more months!). Thanks for the idea.

Hi, I'm fairly new to raw food.

How come a person couldn't just use pumpkin?

You could, but raw pumpkin isn't as sweet/starchy as cooked pumpkin. Also, raw pumpkin is difficult to slice, seed and prepare.
