View Full Version : Replacement for Avocados and Mushrooms?

I really can't stand avocados...they're just TOO rich! What can I substitute for those when the recipe calls?
Also, mushrooms...I know there's not much out there as meaty as mushrooms...are there any really MILD mushrooms that are good?

It would depend in what recipe you would be substituting: Would it be blended? Would it be in a sweet or savory dish?
You may like sweet green peas or young peas, blended, for a savory dish calling for blended avo. For sweet (or savory) blended, I would use green zucchini :).
Not much could substitute for chunks of fresh avo in a salad, for example; but you could make a guacamole with peas, pulsed (so it still has texture or smooth - to your liking, basically) mixed with some zucchini blended very creamy and smooth in a blender. Make sure to add some seasoning -- salt; cumin; finely minced red and green onions; a bit of garlic, if youwant; finely minced jalapeno, or other chile, if you want; some cumin; coriander, ground, if you want; and fold in some freshly chopped cilantro and diced tomatoes. ;D
White or button mushrooms are the mild. As well, you may like to try oyster mushrooms and enoki mushrooms -- I find them mild and you may like them.

Um ... yeah ... they rarely make into any dishes. I just eat them straight. Although, if I exercise some self control, they're delectable sliced thin, marinated, and stuffed along with lettuce and chopped veggies in a collard wrap. A drizzle of dressing before I wrap it up. Yumm.
Stevek42, I can't really comment on substitutions, either, without knowing what the recipes you're wanting to make with avos and mushrooms. With a bit more information, you should have lots of suggestions.

You can often substitue oil for avocado in dressings or soups, but it really does depend on what you are making.
As far as mushrooms go, if you are stuffing them then you can use zucchini, if you are using them in soups, again, zucchini works okay.
