View Full Version : can anyone tell me why this happened?

This morning I made a smoothie to take to work and enjoy on my break-- it included (blueberries, bananas, water and dates) That is it--

When I went to drink it it had geled together no longer liquid but thick thick gelish stuff---

Why did this happen??? It was really weird--

i believe blueberries congeal after awhile.

Yeah, that's a characteristic of blended blueberries. Alissa's blueberry pie is a perfect example of this. But shaking it up really well should work out OR....you could eat it with a spoon and call it pudding! :D Seriously!

Wow I didn't know that. My smoothies often get thicker but I do put chia seeds in them and thought that was the only culprit.

I'd love to try Alissa's blueberry pie, I'll try to get her book soon, I've wanted it for a long time but it's hard to get in Canada which is why I have almost all raw books except hers.

I do have a blueberry pie recipe in another book but it uses whole blueberries mixed in a puree of bananas and dates if I remember correctly, it's really good.

when i take a smoothie on the go i make sure it's all vegetables and no fruit. i think that fruit tends to go rancid more quickly then veggies.

My shakes always thicken up a bit after I initially make them and I use a Vitamix and use various fruits all the time. What I do is stir it up with a fork and then drink it to keep it liquid like. Mine has never gelled though.

Is it the amount of sugar in blueberries that makes them congeal or another factor?

they contain pectin which is a gelling agent.

papaya in a smoothie will do the same things.
